1. Arrival & Ripening
Fresh fruit arrives directly from Australian farms, markets, and trusted local growers β including mangoes and limes grown right here on our farm in Dimbulah, Queensland.
From the moment it arrives, our focus is flavour. We make sure every piece of fruit reaches its peak ripeness before drying β so itβs packed with natural sweetness, full flavour, and the perfect texture.
This gentle approach means the fruit develops real depth of flavour before the drying process even begins β no shortcuts, no compromise.

2. Washing & Sorting
Every single piece of fruit is washed thoroughly to remove dust or natural residue β ensuring a clean, fresh start. After that, itβs carefully hand-checked by our team.
We donβt just chase βperfect-lookingβ fruit. Many of the pieces we use may not meet supermarket beauty standards, but theyβre still full of flavour, nutrition, and goodness. Minor blemishes are fine β what matters is the taste, ripeness, and quality inside.
By combining careful washing with human sorting, we make sure only fruit thatβs truly delicious continues through the process. This way, nothing good is wasted, and you still get fruit thatβs naturally beautiful β just the way it should be.

3. Slicing & Tray Layout
This is where the fruit gets its character. Different fruits require different preparation, and our team takes care to handle each one in the way that brings out its best:
- Mango β cheeks are cut from the seed, the skin removed, and each cheek sliced into ribbons before being laid evenly across trays.
- Banana β peeled and prepared in different ways depending on the batch: sometimes split into thirds for long pieces, sometimes kept whole, and sometimes dipped in lime before drying.
- Pineapple β skinned, quartered, and sliced into naturally sweet pieces.
- Citrus β sliced into bright, tangy rounds.
- Other Fruits β each treated according to its own needs β whether itβs removing tops, peeling skins, or trimming βalways to preserve flavour and texture.
At least four members of our team are involved in this step β each with a specific role, from cutting to checking, to laying out fruit carefully on trays. This way, the fruit is inspected and handled multiple times before it ever reaches the dryers, ensuring consistency, quality, and care.

4. Slow Drying Process β Preserving Flavour and Nutrition
Once trays are loaded, they move into our professional dehydrators. Drying time can take anywhere from 24 hours to 6β7 days, depending on the fruit. For example, blueberries can take up to a week, citrus usually 5β6 days, while other fruits like mango or banana are ready in just 24β48 hours.
This gentle, low-temperature dehydrating is never harsh or rushed. It does more than just remove water β it preserves the fruitβs natural nutrition. Only a small percentage of heat-sensitive vitamins (like vitamin C) are reduced, while most of the fibre, minerals, antioxidants, and essential nutrients remain intact.
By avoiding industrial shortcuts like freeze-drying or high-heat blasting, we ensure the fruit keeps its:
- Natural flavour β concentrated and sweet
- Vibrant colour β bright, not dull
- Chewy texture β soft, never brittle or rubbery
- Nutritional integrity β the goodness of the original fruit, preserved

5. Grading & Packing
Once drying is complete, every batch is inspected by hand β nothing leaves the dryer unchecked. From there, fruit is transferred to the packing room, placed into bulk storage bags, and safely boxed to protect each batch until itβs needed.
When your order comes in, the fruit is freshly packed into resealable, food-safe packets and then placed into satchels or sturdy boxes (depending on order size) for shipping. This ensures maximum freshness at delivery, with months of natural shelf life if stored correctly β all without preservatives or additives.
